Abstract

Community empowerment through the creative economy continues to be developed by the State, as an educational institution, the Zainul Hasan Genggong Probolinggo Islamic University campus also takes part in community empowerment through student KKN activities. Besides studying directly in the community, conducting research and community service, students carry out a work program of activities related to community empowerment with a focus on village assets owned. In Condong Village, it was found that there were several tofu manufacturing home industries. From this tofu factory, waste in the form of tofu dregs was also found. Initially, the tofu dregs were only used as animal feed or thrown away without being used, the KKN students are trying to process it into food. Therefore, students through this work program aim that the community around the tofu factory home industry can utilize tofu ampaqs as a processed food ingredient, so that it can improve the community's economy. The activity was carried out with several stages of training and coaching carried out by students to the community around the tofu factory home industry starting from the manufacturing, packaging and marketing process. This activity was a follow-up to the previous year's student KKN work program which researched the processing of tofu dregs, followed by rebranding updating flavors, packaging and then introducing the product to the general public both in person and online on social media. and the last one is creating a new home industry community for processing tofu dregs into tofu sticks.
